Pumpkin Espresso Morning Glory Muffins

These are awesome muffins to start your day, or as a mid-morning snack!  Check them out!


Ingredients                                                                       Makes 24

1 -15oz can pumpkin

1 cup white sugar

1 cup whole wheat flour

1 ¼ c white flour

1 cup chopped walnuts

1 cup chopped dates

1 stick melted butter

1 ½ tsp baking soda

½ tsp baking powder

1 tsp cinnamon

½ tsp nutmeg

½ tsp salt

1 ½ cup shredded carrots (about 3 carrots)

3 eggs

1 tsp vanilla

2 tbsp espresso



  1. Mix sugar and eggs in a mixer until mix is light and fluffy (about 5 minutes, mixture will turn light in color)

  2. Add can of pumpkin.  Put pumpkin on the side of the mixture, not in the middle, and continue to mix for about 2 minutes

  3. Sift both flours, baking soda and powder into mixture and gently fold in.  Don’t mix completely.

  4. Add the rest of the ingredients (again don’t dump them in the middle) and gently fold until everything is mixed.  

  5. Spoon into muffin tins and cook for 25-30 minutes at 350.
