Chili Con Carne with Grilled Polenta

I love Chili, I really love chili the next day or the following when it has time to marinate in all its delicious flavors.  This is my go to chili recipe, the grilled polenta taste like big ritz crackers and it's sooo good!  This will keep you warm.




2 lbs ground beef

1 onion

1 yellow bell pepper

1 red bell pepper

2-3 stalks chopped celery

2-3 chopped carrots

1 bottle beer (whatever you want is fine, although darker the better in my opinion)

1 c beef broth

28 oz chopped tomatoes

2 tbsp cumin

4 cloves garlic

2 tbsp chili powder

2 tsp paprika

2 tsp chili powder

1 tsp red pepper flakes

1 tsp salt

1 tsp pepper

2 tbsps tomato paste

Zest of one orange

1 package pre cooked polenta (it comes in a tube)


  1. Cook beef in large pot, breaking up meat.  Transfer to plate and set aside.

  2. Cook onion, bell peppers, carrots, and celery until soft. 5-7 min. Adding salt and pepper to vegetables when first hitting the pan.

  3. Add garlic and cook for about 45-60 seconds. (until fragrant)

  4. Add chili powder, cumin, paprika, oregano, red pepper flakes, and tomato paste and cook until brick red, while stirring occasionally.  (3-5 min)

  5. Add beer and simmer until reduced by half

  6. Add beef, orange zest, tomatoes and broth and cook until chili thickens.  About an hour.  

  7. When close to serving, grab a skillet or gridle.  Put heat on high, butter pan and cut polenta in 1/2 inch slices, grilling for 3-5 min per side
