Get Well Chicken Noodle Soup

This some gave me a proud mom moment.  After my boy was sick and finally able to handle some solids I was very happy I was able to whip this up.  I had all the ingredients on hand for chicken soup and this is what I created.  I love the dill in this!  Yum yum!



6 cups chicken broth

1 lb shredded chicken

1/3 cup(dry) thin egg noodles

1 medium onion, chopped

6-8 stalks celery, chopped

6-8 carrots, chopped

1 tsp dill

1/4 tsp cayenne pepper

2 cloves garlic, minced

1 tbsp tomato paste

2 tbsp olive oil

1 tbsp butter

salt and pepper to taste



1. Heat 2 tbsp of oil in pot and cook chicken through.  Once done cooking, set chicken aside.

2.  Add butter, once melted add celery, onion and carrots.  Don't cook until the carrots and celery are completely soft, when you pierce the carrots with a fork there should be some tension.  (about 5 mins)

3. Add tomato paste, garlic, dill, and cayenne pepper cooking for 30-60 seconds.  Until garlic is fragrant.  Stir vegetables with spices and tomato paste until well distributed, add chicken broth

4. Add chicken and cook on low temperature with cover on for 45 minutes.  

5. Add noodles, let cook until done. (about 6-8 min)
