Curry Butternut Squash Soup


Hey Everyone, I hope you enjoy the following recipe!  I am a big fan of curry and the way it pairs with the butternut spuash is awesome.  This is such a good fall soup, perfect for colder weather, and actually pretty healthy for you.  Enjoy!

Ingredients                                                                                        Serves 6

1 butternut squash, cubed

1 onion, chopped

4 carrots, chopped

3 tbsp vegetable oil

3 cups chicken broth

½ c heavy cream

2 cloves garlic

2 tbsp curry powder

1 tsp cinnamon

½ tsp turmeric

½ tsp nutmeg

½ tsp paprika



  1. Add onions and carrots to hot oil and let saute for 3-5 minutes until onions are almost translucents

  2. Stir in curry, cinnamon, turmeric, nutmeg and paprika until you smell spices (about 1 min)

  3. Add garlic and stir for about 15- 30 seconds

  4. Add chicken broth and cover on medium for 20-25 min, until butternut squash is fork tender

  5. Add cream and with immersion blender or blender, blend everything until smooth

  6. Serve!


I like to serve this with chopped cashews and a sprinkle of paprika on top, also great with some bread!  (Let's be real, everything is good with bread)
